BEAN SOUP - EUROPEAN (Fasoulada) 
1 c. dry beans
2 qt. water
1 c. chopped celery
2 c. chopped onion
1 c. chopped carrots
1/2 c. chopped parsley
1 tbsp. tomato paste
1 c. olive oil
Salt & pepper to taste

Soak beans overnight. Rinse and cover with cold water. Let boil. Then simmer about 2-3 hours, until tender. When nearly done, add all other ingredients and let simmer for another 1/2 hour.
