EUROPEAN LASAGNE 
3 1/2 tbsp. butter
4 tbsp. flour
2 1/2 c. milk
1/4 tsp. prepared mustard
Pinch of ground nutmeg
1/4 tsp. salt
5 oz. lasagne
1 c. grated Cheddar cheese
1/2 c. grated Gruyere cheese
2 tbsp. grated Parmesan cheese
1 recipe spaghetti sauce (see previous recipe)

Melt butter in pan. Add flour and cook 1 minute. Add milk and bring to a boil, stirring constantly. Add mustard, nutmeg, and salt. It will be thin and pourable. Use 9 inch square dish and put in layer of white sauce, cheese, meat sauce, and dried lasagne. Repeat and finish with final layer of white sauce and cheese. Do not over-lap noodles; break to fit the dish. Bake at 375 degrees for 45 to 60 minutes until brown. Freezes well. Serves 5 to 6.
