PORK STEW | |
3/4 to 1 lb. boneless pork 2 cloves garlic 1 tbsp. oil 3/4 c. chicken + 3/4 c. beef broth (OR 1 1/2 c. chicken broth if preferred) 2 sm. onions, wedged 2 lg. peeled fresh tomatoes, cut up 2 stalks celery 1 sm. summer squash 1 sm. zucchini, 1/2 inch slices Fresh green beans, cooked 1 tsp. dried oregano 1 tsp. dried basil Salt to taste 3 tbsp. cold water 1 tbsp. cornstarch Cube pork and brown with garlic in the oil. Stir in broth, onions, tomatoes, celery, and spices. Simmer about 1 hour. Add vegetables (include fresh mushrooms if you like them). Bring to boil, cover, and simmer about 5 minute for crunchy texture. Stir cold water into cornstarch and stir until thickened. Delicious with garlic or cheese biscuits. |
