RECIPE FOR "THAT SPINACH SALAD" 
1 lg. bunch spinach, washed & drained
1 head lettuce
3 stalks celery, chopped
1 med. red onion
1/4-1/2 c. sugar
1 c. sour cream
1/2 c. mayonnaise
2 tbsp. vinegar
1 lb. bacon, cooked until crispy, drained & crumbled
Grated sharp cheddar cheese
Grated Parmesan cheese

Tear spinach and lettuce into bite sized pieces (keep separate). Mix together the sugar and sour cream in 1 small bowl and the mayonnaise and vinegar in another.

In a large glass bowl, layer the lettuce, spinach, celery, red onion and 1/2 the bacon. Drizzle with 1/2 of each container of the dressings made above. Repeat layers. Top with remaining bacon, cheddar and Parmesan cheese. Garnish with red onion rings. Chill several hours before serving.
