APPLE COFFEE CAKE 
1 box yellow cake mix
1 (4 oz.) box vanilla instant pudding
1 c. sour cream
4 eggs
1 c. chopped pecans
2 c. apples, peeled & sliced 1/2 c. oil
1/2 c. sugar
2 tsp. cinnamon

Combine dry cake mix, dry pudding, sour cream, eggs and oil. Beat 5 minutes. Pour half the batter into greased 10 inch tube or Bundt pan. Arrange half the apples on batter.

Mix sugar, pecans and cinnamon. Sprinkle half of the mixture on the apples. Cover with remaining batter with the remaining apples and then cinnamon - sugar mixture. Bake at 350 degrees for 1 hour. Cool in pan about 5 minutes.

Total Preparation time 1 hour, 25 minutes. Cook's comments: This cake is better the next day. It smells as good as it tastes.
