PATE BRISEE (PASTRY) ALA SALLY FINE FOOD PROCESSOR VERSION | |
1 3/4 c. all-purpose flour Pinch of salt 1 1/2 sticks chilled butter 1/3 c. water, containing 2 ice cubes Place flour and salt in the bowl of the processor. Rapidly cut the butter into small pieces into the bowl. Turn the machine on and off (about 10 pulses) until the flour looks like cornmeal. Pour in the water and run the machine until the dough looks crumbly (do not process until it forms a ball or the dough will be tough). Turn out on a lightly floured board and knead for a minute or two. Put it in a Baggie and let it rest for 2 hours. Shape and use as desired. (If using empty brace pastry with weights in aluminum foil.) Bake at 375 degrees for 15-20 minutes. Remove foil with weights and bake for 5 more minutes. (I hate raw pastry!) |
