MINIATURE CHEESE CAKES | |
1/2 c. soft butter 3 tbsp. sugar 1 1/4 c. graham cracker crumbs 3 (8 oz.) pkgs. cream cheese 1 c. sugar 3 eggs 1 tsp. vanilla 1 pt. sour cream 3 tbsp. sugar 1 tsp. vanilla In a bowl, work with fingers - combine graham crackers with soft butter, then butter sides and bottom of 18 (muffin pan 3 inch diameter). Press crumb mixture in bottom of pan. In a large bowl beat cream cheese until smooth and light. Stir in 1 cup of sugar. Beat in the eggs one at a time. Stir in 1 teaspoon vanilla. Fill prepared muffin pan. Bake in oven at 350 degrees for 25 minutes. Blend the ingredients for topping, sour cream, sugar and vanilla. Spread over each cheese cake. Bake in very hot oven (500 degrees) until edges of cheese cake are brown, about 5 minutes. Cool for about 20 minutes before removing from pan. Refrigerate and serve cold. |
