BREAKFAST CASSEROLE 
1/2 c. chopped onion
2 tbsp. butter
2 tbsp. flour
1 1/4 c. 2% milk
1 c. sharp cheddar cheese, grated
10-12 slices bacon, cooked and crumbled
6 hard cooked eggs, sliced
1 (7 oz.) bag potato chips

Cook onion and butter in a saucepan (do not brown). Blend in flour. Add milk and thicken. Add cheese. Stir until cheese is melted. Set this mixture aside.

Grease an 8 x 8 inch pan. Place egg slices in bottom. Cover the egg slices with the cheese mixture. Layer potato chips, crushed, and crumbled bacon.

Repeat this 3 times until all ingredients are used. End with bacon on top. Sprinkle top with pepper. Bake at 350 degrees for 30 minutes.
