1 (6 oz.) pkg. hash brown potatoes 1 1/2 c. water 1 1/2 c. shredded Cheddar cheese 1 c. milk 1 c. finely chopped cooked hen* 1/2 c. chopped onion 1 tsp. salt 1 tsp. dry mustard Dash pepper 5 eggs, beaten Combine and pour into ungreased 12x7x2-inch pan. Sprinkle with paprika. Bake in a preheated 350°F oven for 45 minutes or until the tip of a thin knife inserted in center comes out clean. Hen is a stewing chicken with extra flavor, but fowl or any chicken may be used. Chicken legs are a good, economical substitute. |
