CHEESY CHICKEN CASSEROLE 
4 skinless, boneless chicken breasts
1 cup sliced mushrooms
1 (10 oz.) can of cream of celery soup
1 (15 oz.) can peas, drained
2 cups cooked white rice
1 (10 oz.) can cream of mushroom soup
2 cups shredded Mozzarella cheese, for sprinkling

Preheat oven to 350°F. Spray a 10-inch skillet with non-stick cooking spray (Pam) and heat over medium heat for 1 minute. Add the chicken and cook for 15 minutes, stirring often.

Spray a 3-quart baking dish with non-stick cooking spray and place the chicken in the dish. Top the chicken with all the ingredients except the cheese. Sprinkle the cheese on top.

Bake at 350°F for 20 minutes.

Serves 4.
