LIMA BEAN AND HAM CASSEROLE 
1/2 c. diced onion
1/2 c. diced celery
1 tbsp. salad oil
1 c. diced cooked ham
3 c. cooked fresh or frozen lima beans
1/2 c. lima bean liquid
1/4 c. milk
1 tbsp. all-purpose flour
1 tsp. salt
1/4 tsp. pepper
Chopped parsley (optional)

Saute onion and celery in hot salad oil for 5 minutes. Combine sauteed vegetables, ham and lima beans; stir gently and spoon into a lightly greased 1 1/2-quart casserole. Combine lima bean liquid, milk, flour, salt, and pepper; stir well and pour into casserole.

Cover and bake at 350 degrees for 45 minutes. Garnish with parsley, if desired. Makes 6-8 servings.
