BANANA CREAM PIE 
1 baked 9 inch pie shell
2/3 c. sugar
3 tbsp. cornstarch
1/4 tsp. salt
3 egg yolks
1 c. evaporated milk
1 c. water
1 tsp. vanilla extract
1 1/2 c. sliced bananas
Whipped cream or whipped topping

Mix sugar, cornstarch, salt and egg yolks together thoroughly in saucepan. Combine evaporated milk, water; stir into mixture until smooth. Cook over low heat, stirring until thickened, about 10 minutes.

Remove from heat, stir in vanilla and let cool completely. Arrange bananas in baked pie shell. Cover with cool custard spreading with whipped cream or topping and refrigerate.

You have to cook it on med high until thick or else it will not thicken up. I wasted a batch the night before Thanksgiving because I didn't know! It turned out delicious though!
