“CHOCOLATE OATMEAL NO-BAKE COOKIES” IS IN:

CHOCOLATE OATMEAL NO-BAKE
COOKIES
 
2 cups sugar
1/2 cup cocoa
1/2 cup (1 stick) butter
1/2 cup milk
1 tsp. vanilla
3 cups quick-cooking oatmeal
1/2 cup peanut butter

Combine sugar, cocoa, butter and milk in a saucepan. On medium heat, bring to a boil for one full minute.

Remove from heat. Stir in peanut butter (optional), vanilla and oatmeal.

Drop by spoonful onto wax paper. Let cool for at least 30 minutes.

Just an FYI -- I used tub butter, Blue Bonnet AND it is wet outside & my cookies turned out perfect! It's all in the boiling & how long you wait before you drop them. This was my first time making these, so I didn't even know about the butter or anything. But I used it & they were GREAT!

So glad to find the recpie my mother used ages ago! We did not use peanut butter. The cookie has a rich dark chocolate taste. I think the PB weakens the chocolate taste. Try it both ways,. People will think you did two different cookies.

These are also really good frozen! You can freeze them, but they don't fully solidify - no matter how long they are frozen - so you can eat them straight from the freezer. Perfect for summer!

This recipe as written remind my husband of family reunions growing up, where they would get in trouble for grabbing 10 of these cookies off the table at a time. So, on its own it is a fab recipe that gets a 5 star rating from me.

It is also a pretty fun recipe to play around with and modify too. I created a Bite sized "bite truffle" with this recipe by adding 2 tbsp. of Chili powder with the chocolate, replacing the oatmeal with rice crispy cereal, and rolling balls of a more cooled (but not yet hardened) mixture into Graham Cracker Crumbs. The reason I did this was to see if I could make something unique enough for it to be included in my holiday packages.

Another variation was to use dark brown sugar in place of the white and omitted the cocoa. Then, I used a mini muffin pan (the kind used for pecan tassies) rather than wax paper to cool. I filled them 3/4 way with the mixture. Once hardened enough to be cool throughout, I melted chocolate and almond bark and filled the remaining space of the muffin space with it. Once cooled, the result is a cookie that can stand to be wrapped in a very festive way as the top becomes the bottom and turns out perfectly level for stacking.

I can go on and on as this recipe really inspires me to have fun. I hope you enjoy it too!

Love these cookies dearly, for those that have trouble getting there cookies to harden you could try adding 4 large marshmallows to recipe as the gelitan factor helps with them getting hard.

Otherwise I cook them the same as recipe. Sometimes I add half cup of coconut also to recipe.

Enjoyed reading all the comments about these cookies. I noticed many people have mentioned you can't make them during rainy weather or that they are too hard or too soft. Having made handdipped chocolates for many years I can tell you you can fix these problems by controlling cooking time instead of trying to cook at specific time the sugars need to be cooked to a certain stage usually soft ball, or even use a candy thermometer if you have 1 try testing different temps until you get the right 1 for you

This recipe was used only at Christmas in my family when I was growing up. They were called Chocolate Burrs. Coconut was used. Never heard of peanut butter as an ingredient. Will try this Christmas. When I had my family, my sons called them Poo Cookies. Now my sons are married and make these at Christmas. The tradition lives on!!!

I've been making these for more than 30 years, and my three grown sons still call these 'Yummy Peanut Butter Chocolate Oatmeal Thingys'! They can clean up a batch in just a few minutes and they rarely wait til they're cool!
