MARY AN PUMPKIN BREAD 
3 1/2 c. sifted flour
3 c. sugar
1 c. Wesson oil
2 c. canned pumpkin (if fresh leave off most water)
2/3 c. water
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. nutmeg
1 tsp. cinnamon
4 eggs
1 c. pecans or black walnuts

Put sifted flour and dry ingredients in a bowl and mix well. Mix all other ingredients in flour until smooth. Bake in 2 large loaf pans for 1 hour at 350 degrees, 325 degrees for glass pans.

Cut slice loaves across and then lengthwise and make sandwiches with cream cheese filling.

CREAM CHEESE FILLING:

1 (3 oz.) cream cheese
2 tbsp. butter
1 1/2 to 2 c. powdered sugar

Keep refrigerated.
