CARROT COOKIES | |
3/4 c. sugar 3/4 c. shortening 1 c. cooked carrots, mashed 2 c. flour 2 tsp. baking powder 2 tsp. cinnamon 1/2 tsp. salt 1 egg 1 tsp. vanilla 1/2 c. coconut Cream sugar and shortening together. Add egg and carrots. Sift dry ingredients and add to the carrot mixture. Add vanilla and coconut. Drop by spoonfuls onto a greased cookie sheet. Bake at 375 degrees for 10 to 12 minutes. |
