CARROT COOKIES 
1 c. shortening
1. sugar
1 c. mashed hot cooked carrots
1 egg, beaten
2 c. flour
2 tsp. baking powder
1/2 c. chopped nuts
1/2 to 1 tsp. orange extract

Mix in order given. Drop on greased cookie sheet and bake at 375 degrees for 8-10 minutes. When cool, frost with icing made with butter, 4x sugar, orange juice, and orange extract. Makes about 3 dozen.
