ORANGE CARROT COOKIES 
2 c. sifted flour
2 1/2 tsp. baking powder
1/2 tsp. salt
3/4 c. Crisco shortening
1 c. granulated sugar
1 egg
1 tsp. vanilla
1 c. cooked mashed carrots

Sift together dry ingredients; set aside. Cream shortening; add sugar and cream together well. Blend in the egg and beat well. Add vanilla and carrots; blend well. Add dry ingredients gradually, mixing well.

Drop by teaspoonfuls on a greased cookie sheet. Bake at 350 degrees for 15-18 minutes. Frost while warm with the following frosting.

ICING:

3 c. powdered sugar
1 orange rind, grated
4 tbsp. orange juice
3 tsp. melted butter

Mix above ingredients together well. Frost cookies.
