CARROT COOKIES 
1 c. shortening
3/4 c. sugar
1/2 tsp. salt
1 tsp. baking soda
1 egg
1 c. carrots, cooked & mashed
2 c. flour
3/4 c. coconut

Blend all ingredients and spoon onto cookie sheets. Bake at 350 degrees, 10 to 12 minutes, or until browned on top. Ovens may vary. Cool and frost.

TOPPING OR FROSTING:

1 tbsp. butter or magarine
Juice & grated rind of 1 orange
Approximately 3/4 lb. powdered sugar

Mix together.
