ORANGE BAKED CHICKEN 
1 (6 oz.) can frozen orange juice concentrate or 1 1/2 c. orange juice
1 tbsp. grated orange rind
2 tbsp. soy sauce
1 tbsp. minced onion
1/4 c. chopped parsley or 1 tsp. dried parsley
1 clove garlic, minced
1/4 tsp. pepper
1 chicken, cut in pieces and skinned

Preheat oven to 400 degrees. Combine all ingredients, except chicken. Place meat in 9 x 13 inch pan. Pour marinade over chicken. Cover pan and bake for 45 minutes. Uncover and continue baking until tender. Baste several times with sauce. If desired, thicken remaining sauce in pan and serve as gravy. Makes 6 servings. Serve over rice.
