ZUCCHINI PARMESAN 
2 tbsp. butter
2 tbsp. oil
1 clove garlic
1 c. chopped onion
1/2 tsp. salt
1/2 tsp. dried basil
Dash pepper
1 lg. zucchini
1/2 c. water
2 lg. tomatoes
1 lb. Mozzarella cheese
Parmesan cheese

Saute onion in skillet in butter and oil. Add garlic, salt, pepper and basil. Slice zucchini into 1/2-inch pieces and bring to boil in water. Simmer for 10 minutes; drain well. Layer zucchini, tomatoes sliced 1/3 inch thick and Mozzarella sliced 1/4 inch thick in buttered baking dish. Cover with onion and herbs. Sprinkle with Parmesan cheese. Bake for 20 minutes in a 400 degree oven.
