ZUCCHINI PARMESAN 
3 c. zucchini, cut into 1/4" slices
1 tbsp. butter
1 1/2-2 tbsp. grated Parmesan cheese
1 tsp. parsley flakes
Dash salt
Dash pepper

Arrange zucchini slices in 8-9 inch round baking dish. Dot with butter. Cover with plastic wrap. Microwave at high 4-6 minutes or until tender crisp. Drain. Combine cheese, parsley flakes, salt and pepper. Sprinkle over zucchini before serving. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
