LIGHT CARAMEL APPLE SALAD 
4 large apples
1 (8 oz.) can crushed pineapple in own juice, undrained
1 small box sugar-free instant butterscotch pudding mix
3 tbsp. apple juice
1 c. Fat-Free Cool Whip
1/2 c. mini-marshmallows

Chop apples into small cubes with the peeling left on. Combine the pudding mix, crushed pineapple and apple juice. Fold in Cool Whip. Add apples. Mix, then add marshmallows. Refrigerate.
