1 lb. ground beef
2 (1 1/4 oz.) env. taco seasoning mix
3 eggs
1/2 head lettuce, chopped
1/3 c. ripe olives, sliced
1/2 c. chopped onion
3/4 c. Bisquick
1 1/4 c. milk
1 c. cheddar cheese, shredded
1 tomato, diced

Heat oven to 400 degrees. Grease 8"x8"x2" baking dish. Cook and stir ground beef and onion in 10" skillet until brown; drain. Stir in seasoning mix and spoon into baking dish. Beat Bisquick, milk and eggs with a whisk or hand mixer until almost smooth, about 1 minute. Pour over beef and bake until knife inserted in center comes out clean, about 25 minutes. Sprinkle with cheese and bake until cheese melts, about 2 minutes. Cool 5 minutes and garnish with lettuce, tomatoes, olives and if desired, sour cream.
