MEXICAN FRUITCAKE | |
1 (20 oz.) undrained pineapple 2 c. flour 1 c. chopped pecans or walnuts 2 tsp. baking soda 2 c. sugar 2 eggs FROSTING: 1 (8 oz.) cream cheese, soft 2 c. confectioners' sugar 1 stick melted butter 1 tsp. vanilla Mix together all cake ingredients all at one time. Bake in greased 9 x 13 for 45 minutes, glass dish 9 x 13 35 minutes. Mix all frosting ingredients and spread on warm cake. |
