CHERRY PINEAPPLE FRUIT CAKE 
6 eggs
1 lb. butter
2 1/2 c. sugar
4 c. self-rising flour, sifted
1 qt. chopped nuts (pecans, black walnuts)
1/2 lb. candied cherries
1/2 lb. candied pineapple
1 1/2 oz. lemon extract
1 box light raisins

Preheat oven to 275 degrees. Grease and flour pans. Put sifted flour in a large pan and dredge all fruit and nuts into the flour, mix well. Mix all other ingredients and combine with fruit, nut, flour mixture. Mix into a batter with hands. Pour into greased and floured pan and bake at 275 degrees for 2 hours. May use 2 loaf pans.
