MY MOM'S VEGETABLES AU GRATIN 
(Otherwise known as Vegetables All Rotten!)

1/4 c. butter, melted
3/4 c. green pepper, cut into lg. chunks
1 clove garlic
1/4 c. flour
2/3 c. milk
Salt and pepper to taste
2 1/2 c. grated Longhorn cheese
1 c. canned tomatoes, drained
1 (10 oz.) pkg. frozen whole kernel corn, thawed
1 (16 oz.) pkg. frozen whole onions, cooked and drained

Melt butter in pan. Add green pepper chunks and garlic clove. Cook gently until tender. Stir in flour, add milk and season to taste. Heat until thickened. Stir in 1/2 cup cheese and tomatoes. Add corn and onions.

Mix well, then pour into greased 2-quart or oblong casserole dish. Sprinkle with remaining cheese. Bake 1 hour, uncovered, at 325 degrees (350 degrees if using glass dish). Makes 8 to 10 servings.
