DO AHEAD BRUNCH 
1 pkg. (12 oz.) frozen hash brown potatoes
6 eggs
1/3 c. light cream (I use Pet light evaporated)
1 c. (4 oz.) shredded cheddar cheese
2 tbsp. chopped chives (or dry onion flakes)
1/4 tsp. salt
1/4 tsp. pepper
1 c. (4 oz.) shaved ham

Place potatoes in 8 inch square glass dish. Cover and microwave for 6 to 7 minutes on high (stir once). Combine eggs, cream in 4 cup measure. Beat well. Add cheese, chives, salt, pepper and ham. Pour over potato mixture. Blend all together. Cover with wax paper and microwave on medium (50 percent) for 12 minutes, then 3 to 4 minutes on high. Let stand for 5 minutes before serving. Cut into squares to serve. Serves 4 to 8 depending on how hungry you are.

Since microwave ovens vary in power, you may need to adjust your cooking time.
