MAKE-AHEAD MASHED POTATOES 
8-12 servings mashed potatoes (prepare according to box directions)
1 (3 oz.) pkg. cream cheese
1 c. sour cream
Optional: 1 c. shredded Cheddar cheese
Optional: 6 slices cooked crumbled bacon
Optional: 1/4 c. chopped green onion with tops

Soften the cream cheese and mix with the prepared mashed potatoes. Place in greased casserole dish. Spread sour cream over top. Top with options. Cover. Can refrigerate up to 24 hours. Bake uncovered at 350 for 30 minutes.
