CARROT, APPLE AND PINEAPPLE CAKE | |
2 c. carrot pulp 1/2 c. pineapple pulp 1/2 c. apple pulp 1 c. coconut 3 c. flour 1 tbsp. baking soda 1 tbsp. & 1 tsp. cinnamon 1/2 tsp. nutmeg 1 c. honey 4 eggs 1 c. canola oil 1 tbsp. vanilla 1 1/2 c. nuts Mix together carrot, pineapple and apple pulp. Add honey, oil and vanilla; blend well. Sift dry ingredients and add until just blended. Add coconut and nuts. Pour in prepared pan. Bake at 350 degrees for 50-60 minutes. Also makes great muffins. Fill muffin pan 3/4 full and bake 40-45 minutes. |
