CHEESE BLITZES 
3 eggs
1/2 c. flour, sifted
1 c. milk
Pinch of salt

FILLING:

3 lb. pot cheese (or farmer's cheese), strained
1/2 c. sugar
1/2 c. raisins
3 eggs
1 tsp. vanilla

Pour batter into pan, lightly fry on one side only. Stuff and fold with small quantity of filling, then brown all sides in butter. Top with sour cream, applesauce or preserves. For smaller batch, use 1 pound cheese, 1 egg and 1/4 cup sugar, raisins and vanilla to taste.
