PINEAPPLE CHEESECAKE 
8 slices pineapple
8 oz. Farmers cheese
16 tbsp. unsweetened pineapple juice from the can
2 pkgs. unflavored gelatin
Artificial sweetener to equal 4 tsp. sugar
1 tsp. coconut extract (or vanilla extract)
Almost 1 c. water

Dissolve gelatin in pineapple juice and bring to a boil. Put n blender, whip a little, then gradually add Farmers cheese in sections, then pineapple, slice by slice, continuing to whip ingredients after each addition. Add coconut extract. During the addition of Farmers cheese and pineapple, add almost 1 cup water. Pour into an 8 or 9 inch pie plate. Let set in refrigerator.

Makes six servings.

Substitution: 1 serving is equal to 2 Uneedas and 1/2 cup milk.
