PINEAPPLE CHEESECAKE 
1 1/2 c. graham cracker crumbs
2 tbsp. sugar
1/4 c. melted butter

In medium bowl combine graham cracker crumbs, sugar, and butter. Combine well and press onto bottom and sides of 9 inch pie plate. Set aside.

FILLING:

2 eggs
1/2 c. sugar
1/2 tsp. vanilla extract
1 (8 oz.) pkg. cream cheese
1 (8 oz.) can crushed pineapple, drained

In medium bowl beat eggs, then add sugar, vanilla, and cream cheese. Beat until smooth. Stir in pineapple. Pour into crust and bake at 375 degrees for 20 minutes. Cool.

TOPPING:

8 oz. sour cream
3 tbsp. sugar
1/2 tsp. vanilla extract

Beat together sour cream, sugar, and vanilla until smooth. Spread over pie and bake at 400 degrees for 8 minutes. Cool and chill. Makes 6-8 servings.
