PINEAPPLE CHEESECAKE 
8 double graham crackers
1 stick melted butter
1/2 c. sugar
8 oz. cream cheese
1/2 c. sugar
2 eggs

Crush graham crackers and add butter and sugar. Pat into 9 inch square pan. Beat cream cheese, sugar and eggs until smooth. Spread in crust. Bake at 350 degrees for 25 minutes.

TOPPING:

#2 can crushed pineapple
2 tbsp. cornstarch
1/4 c. sugar
1/2 tsp. lemon juice

For topping, cook juices (pineapple and lemon), cornstarch and sugar until thickened. Cool. Mix in pineapple. Spread on cheesecake and refrigerate.
