BUTTERSCOTCH PUDDING COOKIES 
3 1/3 c. all-purpose flour
1 1/2 tsp. baking soda
1 1/2 c. butter, softened
1/2 c. granulated sugar
1 1/2 tsp. vanilla
3 eggs
3 c. butterscotch chips
1 1/2 c. chopped nuts, optional
1 c. brown sugar
1 pkg. (6 serving size) butterscotch instant pudding

Mix flour, baking soda. Combine butter, the sugars, pudding mix and vanilla in a large bowl. Beat until smooth and creamy. Beat in eggs. Gradually add flour mixture. Then stir in chips and nuts. (Batter will be stiff.)

Drop by teaspoonfuls onto ungreased cookie sheets. Bake at 375 degrees for 8 to 10 minutes. Yield 10 dozen.
