PORK CHOPS AND CARAMELIZED
ONIONS
 
4 (3/4-inch thick) center cut bone-in pork chops
2 tbsp. olive oil
3 large sweet onions
salt, pepper, garlic powder to taste
Marsala wine or water to deglaze pan
1 1/2 to 2 cups water

Preheat oven to 350°F. Place olive oil in oven proof skillet, heated to medium-high and add thinly sliced onions, salt and pepper. Reduce heat and cook until onions are brown, stir often, do not burn. Season pork chops on both sides with salt, pepper and garlic powder. When onions are caramelized, remove from pan and set aside. Deglaze pan with wine or water, pour this liquid over onions. Sear pork chops over medium-high heat five minutes each side, cover pork chops with caramelized onions. add enough water to cover lower half of chops.

Bake in 350°F oven, uncovered, for 35 to 45 minutes or until tender. Do not boil pan dry, add water as needed. thicken pan drippings with corn starch slurry for a tasty gravy, if desired, Enjoy!
