CHICKEN PARMIGIANA 
3 1/2 lb. chicken cut into serving pieces
Salt and pepper
1/4 c. butter
1 c. sliced mushrooms
1 green pepper, diced
1/2 c. onion, finely chopped
1 clove garlic, minced
2 c. chopped fresh tomatoes (may use canned)
1/2 c. dry vermouth
1/2 c. sliced stuffed olives
1/4 c. freshly grated Parmesan cheese

Sprinkle chicken with salt and pepper and brown on all sides in butter. Sprinkle with the mushrooms and cook for 5 minutes. Add green pepper, onion, garlic, tomatoes and vermouth. Cover tightly and bake for 30 minutes at 350 degrees. Add olives and cook for 10 minutes. Serve with grated cheese.
