BAKED PINEAPPLE CASSEROLE 
2 lg. cans pineapple chunks, drained

Place chunks in greased casserole dish (Pam spray) Mix:

1 c. sugar
5 tbsp. flour

Sprinkle over pineapple; on top of this sprinkle 1 1/2 cups grated sharp cheddar cheese.

Crush 1 stack Ritz crackers, sprinkle on top of cheese. Melt 1 stick butter and drizzle over crackers. Bake at 350 degrees for 20 to 30 minutes or until bubbly, 25 minutes. To make larger, you can use 1 more can pineapple chunks.

I add 1/4 cup pineapple juice, heated with sugar and flour mixed together, also bake this closer to 40 to 45 minutes and mix the cheese and pineapple together and pour into the dish.
