TOM'S PINTO BEANS | |
2 c. pinto beans (1 lb.) 2 cloves garlic 1/2 lb. salt pork 4 c. (approx.) water Wash beans and drain. Soak overnight in water to cover plus a little extra. Drain and add 4 cups fresh water. Add garlic and salt pork (I rinse the salt pork to remove excess salt, I score it into 3 sections). Cook until tender (about 3 hours). Delicious!!! Serve with corn bread. Is very satisfying as a light, one-dish meal. But you may serve it as a side dish. Can be made into chili by adding 1 teaspoon salt, 1/4 teaspoon pepper, 1/4 teaspoon oregano (leaf), 1/4 teaspoon cumin and 2 tablespoons chili powder. |
