OATMEAL CHOCOLATE CAKE | |
1 3/4 c. boiling water 1 c. uncooked quick oatmeal 1 c. brown sugar, lightly packed 1 stick butter 1 c. white sugar 1 lg. egg (or 3 sm. ones) 1 3/4 c. unsifted all-purpose flour 1 tsp. baking soda 1 tsp. salt 1 tbsp. cocoa 1 (6 oz.) pkg. milk chocolate chips 3/4 c. nuts Pour boiling water over the oatmeal. Let stand 10 minutes at room temperature. Add brown sugar, white sugar and butter in mixing bowl. Stir in mixing bowl until all is dissolved. Add eggs and mix thoroughly. Add flour, cocoa, salt and soda that have been sifted together. Mix well. Add 1/2 the 6 ounce package of milk chocolate chips to batter and stir with spoon. Pour into a 9 x 13 inch cake pan sprayed with cooking spray or grease the pan. Sprinkle the rest of the chocolate chips and 3/4 cup nuts on top of batter. Bake at 350 degrees for 40 minutes or until cake tested comes out clean. (Saves having to ice the cake.) |
