MUFFINS (BASIC RECIPE) 
1 egg
1 c. of milk
1/4 c. vegetable oil

2 c. flour
1/4 c. sugar
3 tsp. baking powder
1 tsp. salt

Add to liquid ingredients. Stir just until flour is moistened. Batter should be lumpy. Fill muffin tins 2/3 full. Bake 20 to 25 minutes at 400 degrees.

Blueberry muffins: use muffin recipe and add 1 cup of well drained blueberries, canned or frozen.

Surprise muffins: follow same recipe and fill muffin tins half full of batter. Add favorite jam or jelly. Add more batter on top. Bake 20 minutes at 400 degrees.

Apple muffins: use muffin recipe and add 1 cup raw unpared chopped apples and (1/2 to 3/4 teaspoon cinnamon added to dough) sprinkle top with mixture 1/3 cup brown sugar, 1/3 cup chopped nuts, 1/2 teaspoon cinnamon before baking. Bake same as above.
