BASIC CORN MUFFINS 
1 c. self-rising flour
3/4 c. self-rising cornmeal
3 tbsp. sugar
1 tbsp. baking powder
1/2 tsp. salt
1 egg
2/3 c. buttermilk
1/3 c. vegetable oil

Preheat oven to 425 degrees. Grease bottoms of 12 medium-sized muffin pan cups. Put 1 teaspoon oil in each cup. Combine flour, cornmeal, sugar, baking powder and salt. Beat egg lightly. Stir egg into buttermilk and oil. Add egg, buttermilk and oil to dry ingredients. Stir lightly. Put into the greased muffin cups.
