BROCCOLI-STUFFED MEAT LOAF
1 1/4 lb. ground beef
1 egg
4 tbsp. seasoned dry bread crumbs
4 green onions, minced, about 1/3 c.
1 tsp. salt
1/2 tsp. dried basil leaves
1/8 tsp. black pepper
1 1/2 c. fresh broccoli flowerets
1/2 c. shredded cheddar cheese
1 tbsp. butter, melted
1 tbsp. tomato ketchup

Combine beef, egg, 2 tablespoons bread crumbs, 3/4 of minced green onions, 3/4 teaspoon salt, the basil and the pepper. Set aside. Bring pot of water to a boil. Drop in the broccoli. Cook 3 to 4 minutes or just until tender-crisp. Drain well. Mix with cheese, remaining bread crumbs, green onion and salt. Press half the beef mixture into an 8 x 4 inch loaf dish, forming an indentation in the center, leaving a 1-inch thick layer on the sides. Fill indentation with the broccoli mixture. Top broccoli with remaining meat mixture. Seal well around the edges, enclosing the broccoli completely. Mix the melted butter and ketchup. Brush top of the loaf with mixture. Bake at 350 degrees for 60 minutes, or until loaf pulls away from sides of pan and meat is done. Serve hot, cut in slices.

Good with baked potatoes, green salad, fresh berries and custard sauce.
