MICHELE'S ZUCCHINI BOATS 
4 large zucchini
1 (1 lb.) pkg. ground beef
1 (1 lb.) pkg. sweet Italian sausage
1 (24 oz.) jar spaghetti sauce (your favorite)
2 cups shredded Mozzarella cheese
2 tbsp. Italian seasoning (McCormick)
salt and pepper, to taste
1/4 cup chopped green pepper
1/4 cup chopped red pepper
1/2 cup chopped onion

Cut zucchini in half lengthwise. Using a spoon, remove seeds and part of the middle to make your "boat". Sprinkle each boat with Italian Seasoning. Season with salt and pepper.

In skillet, brown ground beef, sweet Italian sausage, peppers and onions, then drain. Spoon beef/sausage mixture into the boats, pour spaghetti sauce over meat mixture, top with shredded cheese. Wrap in a foil pack, 3 to 4 boats in a pack depending on size.

Bake in 350°F oven (or on grill) for 45 minutes to an hour.

Note: Foil pack helps steam zucchini.
