CHINESE FRIED RICE 
2 beaten eggs
3 tbsp. cooking oil
1/2 c. finely diced fully cooked ham or pork
1/4 c. finely chopped fresh mushrooms
3 tbsp. soy sauce
3 tbsp. thinly sliced green onion
4 c. cooked rice
Soy sauce

In a 10-inch skillet cook beaten eggs in 1 tablespoon of the oil, without stirring, until set. Invert skillet over a baking sheet to remove cooked eggs; cut into short, narrow strips.

In the same skillet, cook ham, mushrooms, 3 tablespoons soy sauce and green onion in remaining oil about 4 minutes or until mushrooms and onions are tender. Stir in cooked rice and egg strips; heat through. Serve with additional soy sauce. Garnish with fried egg strips and sliced mushrooms, if desired.
