HOT WATER CORNBREAD 
2 c. self-rising cornmeal mix
1 tsp. salt
1 c. boiling water
Cooking oil

Heat oil in black skillet. Combine cornmeal mix, salt and carefully pour in the water. You need to mix the mixture until it is doughy and stiff. You may add a little cool water. Using your hands, being sure they are wet, shape mixture in patties and fry in hot oil until browned lightly or crisp. Serve with fresh vegetables, such as peas, potatoes, greens, etc.
