ITALIAN OMELET 
1 lb. Ricotta cheese (or cottage)
4 Italian sausage
Romano cheese (to taste)
5 eggs
Parsley
Salt and pepper to taste

Mix Ricotta cheese and eggs together until well beaten (approximately 2 minutes). Cook sausage, then chop into small pieces. Combine mixture and remaining ingredients. Pour into pie pan (greased). Cook at 350 degrees for 35-40 minutes. Let cool 10 minutes. Enjoy!
