ITALIAN OMELET 
3 lbs. Ricotta cheese
1 dozen eggs
1 lb. Mozzarella cheese
2 lbs. sausage, taken out of skin

Fry sausage, but don't cook all the way. Cut into small pieces. Beat eggs. Mix in cheeses and sausage. Cook for 1/2 hour on 350 degrees. Then put the broiler on for 6 to 10 minutes to brown. Makes 8 servings.
