MAINE LOBSTER ROLL 
2 cups fresh, cooked lobster meat (cold)
2 tablespoons mayonnaise
1/4 cup finely diced celery with leaves
1/4 teaspoon ground celery seed (optional)
4 hot dog buns or fresh bread rolls
butter

Blend cooked lobster meat with mayonnaise. Add finely diced celery, leaves and celery seed, if desired.

Mix well refrigerate until ready to serve.

Split and toast 4 rolls and spread with butter. Fill rolls with lobster meat and serve.

Note: Imitation crab or lobster meat may be used in a pinch.
