CHICKEN PARMESAN 
Boneless chicken breasts (4-6), pounded thinly
3/4-1 c. seasoned bread crumbs
1/4-1/2 c. Parmesan cheese
1/4 tsp. paprika
1-2 eggs, beaten with 1/4 c. water
Spaghetti sauce, lg. jar or homemade
1-2 tbsp. sugar, optional
Red wine to taste, optional
Oregano
Shredded mozzarella & Cheddar cheese

Mix bread crumbs, paprika and Parmesan cheese. Dip chicken in bread crumbs, egg, bread crumbs. Fry in oil until browned. Pat dry with paper towels to absorb grease. Arrange chicken in baking dish.
