CARROT LOAF 
2 c. raw grated carrots
1 med. onion, grated
2 c. nuts
1 c. bread crumbs
1/2 tsp. paprika
2 tbsp. oil
3/4 c. tomato juice
2 eggs
Salt to taste

Mix together carrots, onion and nuts (the mixture can be put through a food grinder). Add remaining ingredients and mix together. Bake in loaf pan at 350 degrees for 45 minutes to 1 hour.
